| Lefse with Herb Garlic Cream Cheese Roll-up Canapés:

Herb Garlic Cheese: To 8 oz. softened cream cheese, add 1 heaping tablespoon Herb Mix - (refrigerate 2 hrs. - overnight) Herb Mix: 3 Tbs. Parsley Flakes 1 Tbs. Garlic Powder 1 tsp. Majoram 1 tsp. Oregano 1 tsp. Basil 1/4 tsp. Cayenne Spread softened Herb and Garlic Cheese on lefse sheet - roll up - cut into 3/4" slices - frost one end with more Herb and Garlic Cheese and arrange on platter. |
Lefse with Garden Vegetable Cream Cheese and Fresh Spinach Leaf Roll-Up Canapés:

Spread Garden Vegetable Cream Cheese (available in most grocery stores) on lefse sheet - arrange fresh spinach leaves on one end of sheet covering approx. 1/4 lefse sheet. Starting at end with spinach, roll up sheet. cut into 3/4" pieces and arrange on platter. Hint: Be sure to spread cheese up to the far edge of lefse sheet. (the cheese will hold the roll-up together and keep it from unrolling) Use your favorite flavored cream cheese and vegie combination! (spinach dip works great too!) |

| Salmon & Chevre (goat cheese) Rolls
1 small can Salmon or approx. 8 oz. poached and cooked salmon. (smoked salmon or tuna can be substituted) 2 - 3 oz. (1/4 cup) soft Chevre (goat cheese) 1/4 cup Yogurt or Sour Cream 2 Scallions (green onions)(slice endwise & chop finely) 1 tsp. Lemon Zest 1 tsp. Dill Weed (add to taste) Mix together Salmon, Chevre, Yogurt or Sour Cream, Scalloins, Lemon and Dill Weed. Spread on lefse sheet. Cut into 2 1/2" x 6" pieces and roll up. |
Ham and Pickle Roll Up Hors d'oeuvres: Use small dill pickles or if using larger pickles, cut lengthwise in halves or quarters. The pickles should be about finger sized. Spread softened cream cheese, thinly, over entire lefse sheet. Cover 1/2 of sheet with shaved ham. Lay a pickle on the ham end. Cut a lengthwise strip of lefse/ham sheet, as wide as the pickle is long. Roll up the pickle inside the lefse/ham sheet. Push toothpicks into the roll, spaced 3/4" apart. Cut between toothpicks to create little "wheel" shaped snacks. Arrange on platter and serve. |
